		<description><![CDATA[That site is a great resource, huh!?! I am new to beets, just had my first, non-pickled ones last week, in fact. My mother in law was in town and she made dinner while we were finishing up painting one day. She boiled them for us - they were pretty good with butter and S&amp;P - but next I want to try roasting and making the quinoa salad. 

Beet-themed dinner parties? Wow, you have some brave friends!

		<description><![CDATA[Hi Rachel! Welcome! Cucumbers as noodles are a great idea. I have been eating them in a variety of salads this week. This one from Andrea Meyers was great with it&#039;s Asian flavors. We used soy sauce instead of fish sauce as I have yet to find a gluten free and vegetarian fish sauce.
