Hey S - Sorry I never responded...I have made Karina's enchiladas! They are wonderful but a whole lot of work, so I don't do it very often. I need to come up with my own version, maybe in the crock-pot or something.
This was our first taste of black rice and I really enjoyed it. I have wanted to buy it many times at the intl market but wasn't sure what I would do with it. The dish itself was pretty good but a whole lot of work, for me.
BTW, I love Vegetarian Planet, have you seen it? It isn't vegan but you know how to adapt about anything...

As usual, another delicious menu full of things that make my mouth water!! Salt and vinegar chickpeas sound like the best snack ever - please let me know how they turn out!

Have you ever made GF Goddess's sweet potato and black bean enchiladas? They are incredible! Probably a million hours more work than Book of Yum's hash, though. But that flavor combo is just super.

I love black rice, so I am intrigued by the GF Girl dish on your menu. Too bad about the book not being very veg-friendly. That's why I'm not a regular reader of her blog. I loved her first book, though - I devoured it in an afternoon - so I should eventually check out the new book.

I'm excited to hear how all your new cookbooks strike your fancy. Viva Vegan finally came up for me on the library reserve list, so hopefully I can start trying things from that!

Have a great week of cooking!
