Elizabeth! Thanks for stopping by! Yes, I know some people will be appalled at the paraffin, but it's a family recipe around here and I just can't bring myself to change it - yet! Especially since a box of paraffin will last for years when you only use a 1/4 of a block per year! I still have some to use up!
And great to know that the Sunbutter will work.

Hi Renee,
I discovered your blog while looking for SunButter recipes. LOVE that you included the parrafin wax in the Buckeyes --- made me smile remembering my own grandmother (who also swore by lard, but that's another tale). Yep, SunButter works just great in Buckeyes, although you may need to freeze or at least refrigerate them before dipping/coating since the consistency can be a little different. It's a great adaptation for friends and family who have nut allergies (although of course check labels for the chocolate and other ingredients). Looking forward to following your great posts!

Back when I was first diagnosed was when Bette Hagman first started using bean flours in her recipes, so I have been using them for a while. I had forgotten though and had gotten interested in sorghum more lately. I have to remind myself though that the batter doesn't taste too good when you use it, but maybe that is a good thing - I shouldn't be eating the batter anyway!
It doesn't seem like that long ago really...and in fact, I am visiting a former roommate next week in LA, so it will feel like old times, except that she has a house, husband and kid! I definitely don't feel as old as my age says I am! Most days at least...

Yes, thanks for the recipe! I have had to stop making cookies, we have too many and I need to take them on a plane with us. Eek! Not to mention my waistline!

I wish I could keep my recipes organized. I have some 3 ring binders that I keep the ones I have tried and like in. But the others are stashed away in places. But this summer we did end up tossing the boxes I haven't opened in years, that we brought when we moved cross-country. We were having some home renovations done and I was determined to go through them all and sort but it got to be too big of a task and so I just tossed them.

Thank you for stopping in too!

I'm so glad you liked the biscotti - and that you like using bean flours. :) I love them. No beany taste, just healthier cookies. I so wish we could have met when we were at OSU. Seems like not so long ago, huh?

Merry Christmas!
Hugs,
Amy

Thanks for finding my blog and my Cappuccino Thins cookies! I'm glad you liked them!
I am planning on making a bunch more new kinds of cookies this coming week- it's going to be fun!
I had to laugh when I read about your recipe hoarding- I have 2 big lateral file drawers of recipes that are completely categorized (I'm a Virgo!). A lot of my life is not very organized, but at least my recipes are!
Happy Holidays!
