This week I haven’t planned anything too ambitious. The past couple of weeks I have had something new and time-consuming on the menu and I want to take it easy this week. I do still have some frozen paneer in the freezer from our trip to the international market. It is looking for the right recipe but I think it can wait another week or so.
As usual, we are flexible and make four meals throughout the week and subsist on leftovers, freezer goodies and/or dining out for the other evenings.

Here in AZ it’s freakin hot and cooking in one day and just reheating is something that’s a must. Thanks for reminding me, I may copy your week’s recipes they look so good.
Is your white bean recipe pretty similar to this one here? I think it would be good over polenta too but we usually do pasta.
It’s crazy hot here in NM too. We normally aren’t this hot but we’ve had record temps for 4 days now. Hopefully it will cool down. I have had kale to make kale chips but haven’t wanted to turn on the oven, so the chickens may be getting some kale instead…
